摘要
The simultaneous quantitation of organic acids (glycolic, lactic, oxalic, sorbic, benzoic, succinic, malic, pimelic, tartaric, citric + isocitric, quinic, ascorbic, palmitic, caffeic, linoleic, stearic, arachidic, behenic, and chlorogenic acids), mannitol, sorbitol and sugars (arabinose, xylose, rhamnose, fructose, galactose, mannose, glucose, sucrose, maltose, isomaltose, raffinose and maltotriose) are reported. Optimum conditions for simultaneous silylation and quantitation of the 33 possible components of orange, lemon, grape, banana, tomato, apple and pear, by capillary gas chromatography are detailed. The transformation of the organic acid and sugar composition of pears during storage is also described.
