CORRELATION BETWEEN THE STABILITY OF CONCENTRATED EMULSIONS AND THE INTERFACIAL FREE-ENERGY BETWEEN THE 2 PHASES

摘要
An experimental study regarding the stability of gel-like concentrated emulsions is presented. In this kind of emulsion, the volume fraction of the dispersed phase is greater than about 0.74 and can be as large as 0.99. A large variety of organic compounds were employed as the oil phase, and both oil in water ( o w) and water in oil ( w o) concentrated emulsions were prepared. It is found that the stability of the concentrated emulsions can be correlated with the interfacial free energy between the water and oil phases, among other variables; the larger this interfacial free energy the higher the stability. © 1990.
