A fuzzy controller has been developed for a batch cooking process in a smokehouse. Product temperature is monitored during the cooking process to determine whether it is within the typical range for the particular operating conditions. If product temperature is outside the normal operating range, the operator is alerted and remedial actions are recommended. At each time step, the controller estimates the time required to ensure that the slowest-heating product reaches the desired thermal exposure of 60 min at 71 degrees C. Based on the estimated process time, the controller also predicts the product shrinkage at the end of the process. If product shrinkage is considered to be unacceptable, the controller recommends process adjustments to the operator. The controller has been developed and tested for a batch process to cook raw wiener emulsion in a smokehouse.
