Using fluorescence techniques to study changes in membrane structure as a function of ethanol concentration and alcoholism, it was found that ethanol primarily affects probes located at the membrane‐water Interface. Changes in the lipid composition of membranes during alcoholism were detected by fluorescent probes that partition into the hydrophobic interior of the membrane. Copyright © 1979, Wiley Blackwell.
