摘要
Fungal alpha-amylase is used in bakery as a flavor-improving additive. The occupational feature of this allergen in known. The following case report attests the presence of seric specific anti-amylase IgE, thanks to a radio immuno assay (RIA) in which the amylase extract was covalently coupled to sepharose. The part played by alpha-amylase in asthma was evidenced by bronchial challenge. Negativity to skin tests performed with the bacterial alpha-amylase favours the hypothesis of different antigenic epitopes varying with the origin of the enzymes, with no cross sensitization.
