摘要
The discovery of a dipeptide ester, L-Asp-L-Phe-OMe, having an intense sweet taste is reported. Investigation of structure-taste relationships showed that L-aspartic acid is critical for sweetness but that considerable modification of the phenylalanine portion can be tolerated. © 1969, American Chemical Society.
