PROTEASES PRODUCED DURING AUTOLYSIS OF FILAMENTOUS FUNGI

The presence of proteases during the autolysis of filamentous fungi has been tested in 35 fungi (24 Ascomycotina, 7 Basidomycotina, 2 Zygomycotina and 2 Deutromycotina). In the fungi assayed 53% showed protease activity during the degradative process. Among these fungi, 12 were chosen as producers of proteolytic enzymes to study the behaviour of these enzymes present in the culture fluid during autolysis. In all the fungi selected autolysis occurred at pH values between 6.8 and 8.2. The degree of autolysis was greater than 50% in each case. Protease activity in some fungi was found at the start of the degradative process. Generally the activity present in the culture fluid during incubation.
