REACTION RATE OF DEXTRANSUCRASE FROM STREPTOCOCCUS SANGUIS IN PRESENCE OF VARIOUS COMPOUNDS

摘要
Dextransucrase catalyses glucosyl transfer from sucrose to a growing chain of dextran. A highly purified dextransucrase from Streptococcus sanguis was used for testing the effect of various compounds on the reaction rate of this enzyme. The rate of reaction was measured by assaying the release of fructose using a coupled-enzyme method or the Somogyi method. Various dextrans as well as maltose significantly increased the reaction rate, while levan, raffinose and two isomers of sucrose phosphate had no effect on the reaction. © 1969.
