PROTON AND DEUTERIUM NMR-STUDIES OF THE GLASS-TRANSITION IN A 10-PERCENT WATER-MALTOSE SOLUTION

摘要
High power proton and deuterium NMR techniques are used to probe the molecular mobility of water in a 10% maltose-water system over a range of temperatures covering the viscous solution and the glassy state. It is shown that even in the glassy stare, water still retains a high degree of rotational and translational mobility. A model where the water molecules diffuse in channels formed between maltose molecules is used to interpret the data.
