非水相脂肪酶在油脂工业中的应用

摘要
近年来,由于许多微生物酶在非水相中的催化反应具有高度的立体选择性和区域选择性,成为国际上非常热门的一个研究领域。脂肪酶(甘油酯水解酶,EC3.1.1.3)是能在异相系统中即在油-水的界面上起催化作用的酶,具有宽广的底物专一性,可以催化甘油酯、酯、硫酯键、酰胺键等的水解。在非水相中完成酯化、交换酯化及转酯等反应。本文主要对近年来脂肪酶在非水相中催化反应在油脂工业中的应用作了简要介绍。
