食源性微生物PCR检测技术研究进展及标准化讨论

摘要
随着食品安全问题关注程度的不断升温,食源性微生物的检测技术也趋向迅捷、准确、大通量的方向发展。建立在传统微生物学之上的检验方法日益显现出工作繁冗、耗时长、精确性差等缺点。聚合酶链式反应(PCR)技术自上世纪80年代以来被应用于食源性微生物检测领域。PCR技术经历了不断改良,巢式PCR、逆转录PCR直至实时定量PCR的应用,都使食源性微生物的PCR检测技术日趋完善。随着近年来多重、多种PCR的综合应用,PCR检测技术已经在食源性微生物检测中得到广泛的应用。与此相比,食源性微生物PCR检测技术的标准化工作却相对滞后。食源性微生物PCR检测技术的标准化可通过对各种PCR方法的统计、评估、筛选等策略来实施。结合我国实际情况,在建立标准的食源性微生物PCR检测方法,推广标准化PCR检测技术的应用等方面还要很多工作要做。
