<正> 具有抗氧化作用的营养素中,维生素有脂溶性的维生素A、E和水溶性的维生素B2、C等,矿物质如Cu、Zn和Mn通过超氧化物歧化酶(SOD)、Se通过谷胱甘肽过氧化物酶(Gsu-Px)起作用。维生素E(VitE)为最重要的阻断自由基链反应的脂溶性抗氧化剂,它主要分布于生物膜上,在膜上发挥其抗氧化作用,从而保护生物膜的结构与功能。一、VitE的结构与功能
