快速描述性分析方法在食品感官评定中应用进展

摘要
随着对感官描述性分析方法的实用性和适用性要求的不断提高,传统方法面临着巨大的挑战。近年来,描述性分析方法正朝着快速高效的方向逐步发展。综述了近年来几种新兴的快速描述性分析方法的应用研究进展,主要包括Flash Profile、Sorting Procedure、Projective Mapping、Napping、Ranking Descriptive Analysis、Optimized Descriptive Profile,并讨论了快速描述性方法的优缺点和展望了今后描述性分析技术研究的发展趋势。
