多元素组成和稳定同位素比值在蜂蜜溯源研究中的应用进展

摘要
随着生活水平的提高,消费者在关心蜂蜜掺假与否的同时,更加关心其植物和地理来源等真实性信息,各国科研人员纷纷开展了蜂蜜溯源研究。本文综述了自2000年以后多元素组成和稳定同位素比值在蜂蜜溯源相关研究中的应用,重点介绍了原子吸收光谱、电感耦合等离子体发射光谱和电感耦合等离子体质谱测定蜂蜜中元素含量以及稳定同位素质谱测定碳、氮、氢和硫等元素稳定同位素比值在蜂蜜溯源研究中的应用进展,并对多元素组成和稳定同位素比值在蜂蜜溯源研究中的发展方向进行了展望。
