摘要
The maintaining and processing technology is of great importance in the development of fruit and vegetable industry, as well as agricultural products manufacture . The development of Subject in maintaining and processing of fruit and vegetable is important to sciential innovation, people training, society service and development of industry too.lt is the guarantee of industry development. This paper summarized the present situation and future development of the fresh maintaining and processing technology in fruit and vegetable industry ; the main techniques and their application in this field. It also provided a new approach to accelerate the development of our fruit and vegetable industry. The major contradictions to restrict its development were analyzed ,and developing objective and critical yields of Chinese processing industry of fruit and vegetable were pointed out in this paper.
