摘要：

以普通玉米淀粉为原料 ,用压热法制备抗性淀粉 ,用淀粉酶水解方法提纯抗性淀粉 ,然后进行高效排阻色谱 (HPSEC)。计算出抗性淀粉的重均分子量MW——— =18614,数均分子量MW——— =12 681,并得到抗性淀粉分子量分布曲线。该方法是准确、有效的。用还原末端法测定淀粉的平均分子量是不够准确的
