食品废物的研究回顾与展望——基于Web of Science数据库的文献计量分析

摘要
食品废物是人们生活垃圾的主要组成部分。由于其营养成分较高且较难处理等特点,近年来受到人们越来越多的关注。为了深入了解食品废物研究的全球状况和前沿动态,比较客观地反映相关国家及机构在该领域的科学能力和科学影响,采用ISI Web of Knowledge的Web of Science引文数据库,选用普通检索方式,以食品废物作为主题检索词,对1999-2010年之间该库收录的相关文献进行了计量分析。结果表明:统计时间范围内,美国发文量居榜首,中国的发文量增长最快。研究机构中,西班牙国家研究委员会发文量位列第一。Chemistry(化学)、Food Science and Technology(食品科学与技术)、Environmental Sciences and Ecology(环境科学与生态学)是食品废物发文量最多的主流领域。《Journal of Agricultural and Food Chemistry》是发文量最多的学术期刊。此外,通过对关键词的分析,指出了有关食品废物的热点处理方法及其发文量的趋势。
