摘要
采用HPLC分析技术对国内茶树种质资源的EGCG3"Me含量及其变化规律进行了研究。结果表明:在200份高多酚茶树种质中发现EGCG3"Me的含量大于1%的茶树种质有6个;茶梢中EGCG3"Me的含量随着叶片成熟度的提高而增加,并且秋季新梢高于夏季新梢;绿茶加工过程能有效保持鲜叶中EGCG3"Me含量,而乌龙茶加工过程的萎凋工序中茶叶中EGCG3"Me含量有明显增加。
