产γ-氨基丁酸乳酸菌的筛选及初步鉴定

摘要
γ-氨基丁酸是哺乳动物体内的一种抑制性神经递质,具有许多重要的生理功能。利用MRS培养基从自然生境中分离了1000余株细菌,经纸层析和HPLC检测,发现其中一株能转化谷氨酸钠生成GABA,产量为4.84g/L;转化产物通过HPLC-MS得到了证实。通过形态特征和生化特性鉴定,初步判断该菌为乳酸菌。
