真菌毒素对肠道屏障的影响

摘要
存在于人类食品和畜禽饲料中的真菌毒素,尤其是脱氧雪腐镰刀菌烯醇(DON)、玉米赤霉烯酮(ZEN)、黄曲霉毒素B1(AFB1)对人类和动物健康可造成严重危害。肠黏膜层、肠黏液、肠道微生物菌群对肠道健康起到重要保护作用。了解真菌毒素如何与肠屏障相互作用,尤其是真菌毒素对肠上皮细胞、黏液和微生物菌群之间的影响,对阐明真菌毒素的毒性作用具有重要意义。论文总结了近年来3种主要真菌毒素对肠道屏障的影响,为防控真菌毒素中毒提供参考。
