摘要
<正>甲壳素(chitin)是由虾、蟹、昆虫的外壳及菌类、藻类的细胞壁中提炼出来的一种天然的、带正电荷的生物多糖高聚物,又称甲壳质、壳质、几丁质。壳聚糖(chitosan)是由甲壳素经浓碱处理后脱去乙酰基的产物,又称脱乙酰甲壳质、可溶性甲壳质甲壳胺。
