二氢杨梅素协同乳酸对副溶血性弧菌的抑制作用

摘要
副溶血性弧菌是一种广泛存在于水产品中的食源性致病菌,天然抗菌剂协同有机酸对其有很好的抑制作用。研究了二氢杨梅素在乳酸协同下对副溶血性弧菌的抑制作用,结果显示:二氢杨梅素浓度为7 g/L下,对副溶血性弧菌有明显的抑菌效果,抑菌圈直径达10.7 mm;添加1%的乳酸抑菌圈直径可达19.3 mm;pH调整为5~6,最适条件下抑菌圈直径可达19.8 mm,最低抑菌浓度仅为0.625 g/L。与同浓度的山梨酸钾对比下,二氢杨梅素协同乳酸的抑菌效果与山梨酸钾相当,在浓度均为1 g/L下,抑菌直径均为7.2 mm。
