摘要：

牛磺酸是一种含硫的β -氨基酸 ,自从被确立为人体条件必需氨基酸的营养学地位后 ,越来越成为人们关注和研究的焦点。牛磺酸不仅分布广泛 ,而且对多器官和系统有着非常重要的作用。牛磺酸在可兴奋组织中有很高的浓度 ,细胞内牛磺酸的衰竭已经和发育缺陷、视网膜损伤、免疫缺陷、心血管疾病等联系在一起。目前对牛磺酸的研究已经进入一个崭新的阶段。
