摘要
胶原蛋白是生物体内的重要蛋白质,是结缔组织的主要蛋白质成分。胶原蛋白具有多样性及组织分布的特异性,是与各种组织和器官功能相关的功能性蛋白质。鱼皮胶原蛋白及其酶解产物胶原活性多肽已引起人们的广泛关注。现对鱼皮胶原蛋白的种类、性质、提取方法以及胶原活性多肽生理活性等的研究进展作一综述。
