四川泡菜生花酵母的分离与鉴定

摘要
分离并鉴定了引起四川泡菜"生花"的腐败微生物。将"生花"的四川泡菜样品,通过孟加拉红培养基和YM培养基的分离培养,得到不同菌落形态的2株菌株。经26S rRNA D1/D2结构域分子生物学鉴定为克鲁维毕赤酵母SH1和白地霉SH2。发酵实验证明SH1和SH2均能引起明显的"生花"和腐败现象。
