摘要
This paper presents the featurs and requirements of ultra-high pressure food precessing according to some reseaches into its mechanism. By comparing the structures of different types of available ultra - high pressure vessels, cylinder - shaped structures suitable for this processing are illustrated. And some inethods on improving the proficiency of the food processing are also given.
