摘要
对低醇葡萄酒的生产技术研究进行了综述。低醇葡萄酒的生产技术在不断改进,目前应用最广的是膜渗透法和旋转锥体法。这两种方法处理温度较低,香气能够保持,也可以恢复,添加辅料可平衡口感。总之,低醇葡萄酒的总体质量得到了改善。
