本文介绍了蛋白质含量和质量及淀粉组份与小麦籽粒品质的关系，论述了小麦籽粒品质的形成特点及影响因子和技术调控途径，分析了小麦籽粒产量与品质的关系，提出通过基因型、生态环境、技术调控等综合运用来实现小麦优质、高产、高效的协同发展的手段。
