生物方法去除真菌毒素研究进展

摘要
真菌毒素是一类由真菌产生次级代谢产物,其种类繁多、且能污染多种作物和食品;真菌毒素一般都具有强烈毒性或致癌、致突变作用,对人和动物安全健康形成巨大隐患。该文主要从微生物菌体吸附作用、微生物降解作用等方面介绍生物方法去除真菌毒素研究进展,说明生物方法去除真菌毒素反应条件温和、降解效率高、不会对食品营养价值造成大的流失,生物方法将可能逐渐成为去除真菌毒素首选方法。
