摘要：

酪蛋白是乳中含量最丰富的蛋白质 ,是幼小哺乳动物的主要食物来源 ,能够为幼小哺乳动物提供充足的能量和各种氨基酸。长期以来 ,酪蛋白仅仅被人们视为一种营养蛋白。但近年来的研究结果表明 ,除其营养功能之外 ,酪蛋白还具有重要的生理功能 ,是生物活性肽的重要来源。到目前为止 ,已经有数十种生物活性肽被水解和释放出来。
