摘要
木糖醇是一种五羟基糖醇,因其特有的性质,已被广泛应用于食品及医药卫生行业。本文综述了近几年酵母菌转化木糖生产木糖醇的一些研究情况,主要介绍了酵母菌代谢木糖的途径,发酵或转化条件对木糖醇积累的影响,基因工程菌应用等方面的研究进展。
