摘要
综述了毛细管电泳方法测定乳蛋白的研究,阐述了毛细管电泳分析酪蛋白、乳清蛋白和肽的方法,尤其评价了在乳制品的热处理程度、掺假检测、蛋白水解程度方面的应用。
