摘要
<正>2氢化氢化反应是在镍(Ni)等催化剂作用下,直接将氢气加成到不饱和脂肪酸双键上(H2C=CH2+H2→CH3CH3)一种化学反应。传统氢化工艺如图9所示。氢化目的之一是在某一温度范围内,制成所需硬度油脂。如将大豆油等液状油,转变为适宜于涂抹面包食用时适当硬度物理性质;目的之二是提高产品稳定性。
