摘要
乳酸菌是益生菌,要发挥其益生功能,首先要求菌株能够定植到肠道内,而黏附被认为是定植的第一步。菌株的黏附需涉及到其表面蛋白的参与,因此,本文对乳酸菌的表面蛋白进行综述并对表面蛋白锚定到细胞膜上的机制进行简要介绍。
