氯丙醇类化合物 ,尤其是三氯丙醇对酱油乃至一般食品的污染已经成为国际上关注的食品安全热点问题之一 ,已经被 JECFA确定为食品污染物。为对该类物质的毒理安全性有一全面的了解 ,本文对氯丙醇类化合物的种类、特性、代谢动力学、急慢性毒性作用、致突变性、致癌性的研究情况作了综述
