摘要：

<正>壳多糖是由β(1→4)糖苷键连接的N-乙酰-葡糖胺残基同聚物,它存在于真菌细胞壁、蠕虫微丝蚴鞘以及昆虫和介虫的外骨骼中。壳多糖酶能够催化壳多糖中β(1→4)糖苷键的水解。哺乳动物壳多糖酶属于进化保守家族糖基水解酶18(GH18),可以进一步将其分为具有酶活性的真正的壳多糖酶和无酶活性但保留壳多糖结合活性的壳多糖酶样蛋白[1-2]。已
