国外商务游客的餐饮行为研究——以广交会国外采购商为例

摘要
有关商务游客的餐饮行为研究尚是一个盲点。本文以广交会的外国采购商为研究对象,剖析他们在广州的餐饮行为,包括其餐饮选择、餐饮选择因素的重要性感知及满意度,并利用重要性与绩效评估方法分析广州餐饮业的优劣势,以期对商务城市餐饮规划和管理以及餐饮企业提供启示。对来自80多个国家和地区的206位外商抽样研究表明:外商餐饮选择的感知因素方面,服务已经取代了食物本身,成为餐饮选择决策中最重要的影响因素;苛求型、外在追求型和实用型是外国商务游客的3大类型,3类游客的比例大致相同;IPA方法显示广州快捷服务、友好服务、营业时间、便利性这几个因素的绩效应该继续保持目前的良好水平,而在菜式多样性、食物口味、食物质量、距离、卫生条件和舒适度这几个方面应该集中资源,予以改善强化和提升。
