绿原酸、隐绿原酸和新绿原酸在中性和碱性pH条件下的降解动力学

摘要
本文研究了绿原酸(5-CQA)及其同分异构体隐绿原酸(4-CQA)和新绿原酸(3-CQA)在中性和碱性p H条件下的降解规律。结果表明,3-、4-、5-CQA在酸性p H条件下较为稳定,在中性和碱性p H条件下不稳定,且随碱性的增强,降解越强烈,转化成的CQA总量越低,但并不生成咖啡酸。同时,3-CQA和5-CQA在水解时更趋向于转化为4-CQA,而4-CQA水解时更趋向于转化为3-CQA,而非5-CQA。通过比较中性和碱性p H条件下3-、4-、5-CQA的降解动力学参数发现,反应速率常数k值的大小顺序为4-CQA>3-CQA>5-CQA,降解半衰期t1/2值的大小顺序为4-CQA<3-CQA<5-CQA,说明在中性和碱性p H条件下三者的稳定性顺序为4-CQA<3-CQA<5-CQA。
