摘要
酪蛋白是牛乳中的主要蛋白质 ,其中蕴藏着许多具有潜在生理功能的活性肽 ,这些肽在母体蛋白质序列内是无活性的 ,通过体内或体外酶水解的方式释放出来后 ,即可作为具有类似激素活性的调节物质。本文综述了有关酪蛋白中所含活性肽的研究进展
