摘要：
赭曲霉素A(Ochratoxin A)是曲霉属和青霉属一些产毒菌株次级代谢产物,是一种重要食品污染物,具有强烈肾毒性和一定肝毒性、神经毒性及免疫毒性,并具有致癌、致畸、致突变性。该文介绍赭曲霉素常见产生菌及其对食品污染,毒理学特性及检测方法。
