蒜氨酸及其相关活性组分的研究进展

摘要
大蒜中的多种活性物质具有很多重要生理功能,本文对大蒜中稳定的活性前体物质蒜氨酸在生物体内的转化途径、与真正发挥药效活性的物质硫代亚磺酸酯(如蒜辣素)的关系、活性物质因不稳定而产生物质的系列变化以及相关的物质代谢产物进行了总结。
