概述了热处理对果实表面的杀菌、杀虫卵,减轻低温贮藏冷害,调节果实后熟,改善贮藏品质,延长贮藏期等方面的作用。作为一种非化学处理方法,果蔬贮前的热处理极具研究价值和应用潜力
