韭黄、韭菜、大蒜叶的抗突变作用机理

摘要
应用SOS显色试验研究了韭黄、韭菜、大蒜叶3种蔬菜水溶性提取物的抗突变作用机理。结果表明:这些蔬菜提取物能在大肠杆菌GW1060,GW1104中抑制温度(42℃)诱发的SOS反应,但不能抑制SOS网络开放型菌株GW2707的SOS反应,因此,其抑制SOS反应的机理为在细胞内抑制RecA蛋白酶调控的lexA抑制体的裂解。3种蔬菜提取物去突变试验结果表明,尚有部分在细胞外直接灭活致突物的作用。
