利用微生物生产ω—3多不饱和脂肪酸的研究进展

摘要
ω— 3多不饱和脂肪酸对人体有重要的营养和保健作用 ,目前鱼油是它们的主要来源 ,由于生产工艺复杂 ,且存在腥臭味 ,已无法适应市场的需求。利用微生物生产ω— 3多不饱和脂肪酸则可以克服上述不足 ,因此受到广泛的关注 ,笔者论述了这方面的研究进展。
