摘要
Mango peel scrap was used as raw material in this experiment to extract pection. The method of producing pectin that extracted by acid solution and precipitated by ethanol was applied. The influence of pH value, time of ex-traction and temperature on the production was studied. The optimun condition was that mango peel scrap was trans-ferred into acid solution of pH2, and the solution was stirred at 85℃~90℃ for 90min100min.
