采后果蔬低温贮藏冷害研究进展

摘要
低温贮藏是控制和延长采后果蔬贮藏品质有效的方法之一,但不适的低温贮藏会造成采后果蔬冷害的发生。作者从采后果蔬低温贮藏冷害的研究现状出发,分别从影响冷害的因素(内、外因)、冷害的机理及症状、冷害发生时生理生化指标的变化(尤其关注冷害对采后果蔬细胞膜透性、抗氧化酶活性以及组织细胞超微结构的影响)、防止和减轻采后果蔬冷害措施等方面,阐述了近年来关于采后果蔬低温贮藏冷害的研究进展。
