乳酸菌发酵产生共轭亚油酸条件的研究

摘要
分别用嗜酸乳酸杆菌Lactobacillusacidophilus 1.185 4、干酪乳杆菌 (L .casei)Bs5、Bs7及乳酸乳球菌(Lactococcuslactis)L318进行发酵 ,培养液中添加一定量的亚油酸 ,发酵物用正己烷萃取纯化 ,测定其紫外吸收发现 ,菌株 1.185 4、Bs5、Bs7均在 2 34nm处得到共轭亚油酸的特征吸收峰 ,其中菌株 1.185 4的吸收值最大 .在MRS培养基中加入 0 .1%亚油酸 ,接种菌株 1.185 4,37℃静置培养 2 4h ,为产生共轭亚油酸的最佳条件 .用脱脂牛奶作培养基 ,获得了与上述相同的结果 .以纯品共轭亚油酸为标准 ,在 2 34nm处作标准吸收曲线 ,可计算出发酵物中共轭亚油酸的含量
