摘要
:
On suspension: While slightly hydrophobic silica particles can stabilize emulsions by forming dense, close-packed monolayers at the droplet surface that act as a steric barrier against coalescence, strongly repulsive particles can stabilize emulsions as a result of spontaneous particle accumulation in a dense monolayer bridging the emulsion droplets that are sparsely covered with particles (see microscopy images). (Figure Presented) © 2006 Wiley-VCH Verlag GmbH & Co. KGaA.
