This paper presents a discussion of the difference between fixed and mixed ANOVA models in sensory analysis. The two models are related to different ways of considering the assessors. rests for hypotheses in the two models are presented. Alternative analysis techniques and alternative hypotheses are proposed. A simulation study of the effect of a common violation of standard ANOVA assumptions is presented in the appendix.
