摘要
This review deals with phytase (myo-inositol hexakisphosphate phosphohydrolase) and covers microbiological sources, phytase occurence in plants and animals, its purification, physico-chemical and molecular properties. Protein engineering of phytase and potential enzyme applications are discussed.
